Corn-Free, Gluten-Free Ketchup
Anyone I know who has a food allergy is always frustrated over the same problem – finding condiments and marinades that don’t contain the offending allergen. Condiments, dressings, and marinades are some of the worst culprits for an allergic reaction, mainly because people don’t expect it. This is especially tough for those suffering from a corn allergy because high fructose corn syrup basically dominates the processed food world. When this is the problem, one is presented with 2 options; purchasing a pre-made, allergy-free (rather expensive) version of the desired product OR make it at home! Homemade is always better because you will know for a fact what is in it and you can control the taste. With that in mind, here is a recipe for homemade ketchup that is corn-free and gluten-free. It’s perfect for topping fries, burgers, macaroni and cheese (don’t judge – it’s delicious!), or whatever you like to cover in ketchup. Enjoy!
Tummy-Tamed Homemade Ketchup Recipe:
2 (8 ounce) cans of organic tomato paste (If you’re feeling super productive, you can make your own. I like this recipe)
1/4 c apple cider vinegar or white vinegar, depending on your taste.
2 tbsp lemon juice
1/2 tsp onion salt
1/2 tsp garlic salt (I also like to add another 1/4 tsp garlic powder or fresh garlic because garlic is DELICIOUS, but use your own judgement)
1/4 cup honey (If you don’t have honey, you could substitute maple syrup. It will change the taste a bit, but it will work)
Mix all of the ingredients well and bring the mixture to boil on the stove. Simmer for about 15 minutes, then remove the ketchup from heat for 10 – 15 minutes. Pour it into a container and refrigerate. This recipe makes a fairly decent amount, depending on how much ketchup you consume.
